OATMEAL CAKE

I have been making this Oatmeal Cake for years.  This year I decided to make the cake and then cut into small pieces and put in cupcake holders.  This works great for parties and get together’s when you have several desserts to choose from.  This cake is very moist and delicious.  Even if you do not like oatmeal, you will love this cake.

Pour 1 1/2 cups of boiling water over 1 cup old fashioned oatmeal and let mixture cool.

Mix
1 cup brown sugar
1 cup white sugar
1/2 cup wesson oil
2 eggs – beat eggs will

Add 1/1/4 cups of all purpose flour and 1/2 teaspoon baking soda
Add 1 teaspoon of cinnamon to the above mixture add oatmeal and mix well.

Bake at 350 degrees in an oblong pan for 20 to 25 minutes.

Topping
1 can of sweetened milk
3 egg yolks
1 cup brown sugar
1 stick of butter
Cook in a non-stick pan until thick
Add 1 cup of nuts and 1 cup of coconut (coconut is optional)
