Meatloaf

Who doesn’t love a good meatloaf.  This meatloaf is moist and topped with a delicious sweet sauce.

Ingredients:

1 lb of ground beef
1/2 cup of milk
12 saltine crackers
1/2 cup of grated parmesan cheese
a pinch of salt
a pinch of pepper
2 tbsp of parsley
2 eggs, beaten
For the Sauce:

1 1/2 cup of ketchup
1/3 cup of brown sugar
1 tsp dry mustard
tabasco to taste

Preheat oven to 350 degrees.  Pour milk over crackers.  Allow the milk to soak into the crackers.  This will take several minutes.  Place the ground beef, milk-soaked crackers, parmesan, salt, pepper and parsley in a mixing bowl.  Pour in beaten eggs.

Mix the ingredients until well combined.  place the mixture into a greased loaf pan.  Pour 1/3 of the sauce over the top of the meatloaf.  Spread with a spoon.  Bake for 40 minutes, then pour another 1/3 of the sauce over the top and continuing baking for 10 minutes.  Slice and serve with remaining sauce.
