MASHED POTATOES WITH MOZZARELLA CHEESE

INGREDIENTS:

1 tablespoon butter
4 russet potatoes peeled and cut into 1-inch pieces
1/2 cup of whole milk
1/2 cup of butter melted
1 cup of shredded mozzarella
1/4 cup of grated parmesan
Salt and pepper
2 tablespoons of plain dry bread crumbs

Preheat oven to 400 degrees
Coat a 8 x 8 baking dish with 1 tablespoon of butter

Cook the potatoes in a pot of boiling salted water until they are very tender, about 15 minutes 
Drain and mash well.  Mix in the milk and melted butter.  Then mix in the mozzarella and half of the parmesan.
Season to taste with salt and pepper
Transfer the potatoes to the baking dish.
Stir the bread crumbs and remaining parmesan in a small bowl to blend
Sprinkle the bread crumb mixture over the mashed potatoes

Bake uncovered until the topping is golden brown, about 20 minutes, or cover and refrigerate until you are ready to bake
