Mac and Cheese Recipe

I just love the Pioneer Woman (Ree Drummond).  I follow her blog and I think she has some really cute stories, recipes and ideas. 

  I recently tried Ree’s Butternut Squash Mac and Cheese recipe she has on her blog. 

First you cook the onions in a skillet with butter.  As the onions are cooking you cut the butternut squash in half, don’t forget to scrape out the seeds and pulp, baste with olive oil and roast it in the oven at 400 degrees for 25 minutes, or until you can easily insert a fork in it. Once cooked scrape out the squash and mash.  Only use one half of the squash.

Then cook your macaroni and set aside.  Below are the ingredients.

Once you have completed these steps go back to the skillet you cooked the onions in and add butter and flour, cook for about 2 to 3 minutes and then add milk.  I added 1 cup.  Let this cook until it thickens a bit. Roughly 3 minutes or so.
 
  Then add the mashed butternut squash.  Once the squash is mixed add the sharp cheddar cheese and the macaroni.  Oh and don’t forget to salt and pepper.
 
At this point it is ready to eat, or you can continue to the last step that Ree has listed and melt more butter, then add bread cumbs to the butter and sprinkle on top of the mac and cheese.  Place in the oven and cook for another 15 to 20 minutes.
