We had our Thanksgiving luncheon at work today and one of my co-workers brought this delicious and beautiful cheesecake.  Here is the recipe:

66 vanilla wafers
1 1/4 c sugar, divided
1/4 c margarine or butter
3 pkg. 8 oz cream cheese, softened
1/2 c sour cream
1 tsp vanilla

3 eggs
15 to 25 caramels (you can also use caramel topping instead)
3 tbsp milk
1/2 c pecan pieces, toasted

Finely crush 50 wafers; mix 1/4 c of sugar and the margarine.  Press firmly on bottom of pan.
Stand remaining 16 wafers around the edge of the pan
Beat cream cheese and remaining 1 cup of sugar in large bowl with electric mixer on medium until
well blended.  Add sour cream and vanilla, mix well.  Add eggs, one at a time, beating on low speed
after each addition just until blended.  Pour into prepared crust
Bake at 325 for 45-50 minutes or until center is almost set.  Run a small knife around the edge to loosen cake.  Cool before removing from pan.  Refrigerate at least 4 hours, best if overnight.
Microwave caramels and milk on high for 1 minute or until caramels are completely melted, stirring
every 30 seconds.  Cool slightly.  Pour over cheesecake top evenly with pecans.  Use wafers as a guide to cut into 16 even pieces. #cheesecakelovers
