Chicken Quesadilla’s with Dipping Sauce

This is a great dish to make when you do not have a lot of time.  Kids also love it. First you will need to cook your chicken.  I use all white meat chicken breast. I pound the chicken out before I cook it, then I cut the chicken into strips and place in the skillet until cooked thoroughly.

Once the chicken is cooked, take the flour tortilla and place in the quesadilla maker.  I have a quesadilla maker (which I love) but if you don’t have a quesadilla maker, you can do this in a skillet.  Lay the flour tortilla in the quesadilla maker or if using a skillet add olive oil to the skillet first, just enough so the tortilla won’t stick. 

Next layer with colby jack cheese (I use the thin squares), chicken, jalapeno peppers (optional), colby jack cheese again and another flour tortilla. Close the lid and cook for approximately 5 minutes, or until the top is lightly browned.

Then make your dipping sauce.  Take 2 to 3 tablespoons of ranch dressing and add 3 to 4 tablespoons of picante sauce. Enjoy!
